Burger Buns Stuffed French Toast with Blueberry Compote

How many times have you watched your burger buns grow green fuzz because you just can’t make another burger this week? I always buy too may buns for the weekend party and end up throwing them out, or feeding them to my chickens for a snack.  This weekend, I turned my extra buns into a delicious Pain Perdu (stuffed french toast) for breakfast.  This is Chef Takis’s favorite breakfast.  You can watch him make it at this link  https://youtu.be/SVpNIMsw0RQ .   Below are step by step instructions on how to make  this easy breakfast.  Make it, and become a super star in your kitchen.

Ingredients: makes 6-8 servings. 

  • 8 Buns
  • 4 eggs
  • 1/4 cup heavy cream
  • 1 tsp vanilla
  • 1/2 tsp salt


  • 1 stick cream cheese
  • 1 cup powdered sugar
  • 1 tsp vanilla
  • 1/4 milk

Whip these ingredients in the Kitchen Aid with the whisk attachment, or use a hand whisk.

Blueberry Compote:

  • 2 packages fresh blueberries
  • 1/2 cup brown sugar
  • 1/2 cup water
  • 2 tsp lemon juice
  • 1 tsp vanilla

Add all blueberry ingredients to a sauce pan and cook for 5 minutes.  You can smash a few blueberries to thicken the sauce while it cooks.  Once it’s cooked, pour it on your stuffed buns.

Any bun will do!




Mix  cream cheese with powdered sugar ,vanilla and milk.  Make sure the cream is spreadable and spread it on the bottom bun.  Sandwich the cream cheese with the buns and dip it in the egg mixture. 
Whisk eggs, cream and vanilla together. Coat the stuffed buns in the egg mixture and place in a warm non stick skillet.
Flip it and coat the other side. 
I added a little butter to my pan.  When Chef Takis and I are cooking I always tell him, “A little butter never killed anyone, but a lot did.” 

After you flip the bun, smash it with the back of the spatula.

You want your buns to be nice and toasty like this. No one likes mushy buns 😉
In a sauce pan, add your blueberries, brown sugar, vanilla, and lemon juice.
Cook the mixture on medium heat until it looks saucy. 

Plate your buns,  top with the blueberry compote and powdered sugar.  Ta-Da…you are a star.

I put them all in a serving dish for everyone to serve themselves.
